Crockpot Hamburger Potato Casserole

Ingredients
  

  • 1 lb 450 g ground beef
  • 1 small onion diced
  • 4 medium potatoes thinly sliced
  • 1 can 10.5 oz cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika optional
  • 1 tablespoon olive oil or butter

Method
 

  1. In a skillet, brown ground beef with diced onions until no pink remains. Drain excess fat.
  2. In a bowl, whisk together the soup, milk, garlic powder, salt, pepper, and paprika.
  3. Grease the Crockpot with butter or nonstick spray.
  4. Layer sliced potatoes at the bottom, followed by beef mixture and sauce. Repeat layers, finishing with sauce and cheese.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
  6. Top with more cheese before serving for extra creaminess.

Notes

  • Add frozen peas, corn, or green beans for extra nutrition.
  • Store leftovers in an airtight container for up to 4 days.
  • Reheat in the microwave or oven until warmed through.
