Method
- Pat the chicken breasts dry with paper towels.
- Season both sides of the chicken with Italian seasoning, garlic powder, salt, and black pepper.
- Place the chicken breasts in the bottom of the crockpot.
- Add the minced garlic, chopped sun-dried tomatoes, and chicken broth.
- Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken reaches an internal temperature of 165°F (74°C).
- About 20–30 minutes before serving, stir in the heavy cream and grated Parmesan cheese.
- Add the fresh spinach and stir gently.
- Cover and cook for another 10–15 minutes, until the spinach wilts and the sauce becomes creamy.
- Check the sauce consistency and add a splash of chicken broth if needed.
- Serve the chicken warm with the creamy sauce over pasta, rice, or mashed potatoes.

- Boneless, skinless chicken thighs can be used instead of chicken breasts.
