Ingredients
  

  • For the Chicken
  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 cup salsa
  • ½ cup low-sodium chicken broth
  • 1 tablespoon fresh lime juice
  • 3 cloves garlic minced
  • teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Tacos
  • 12 small corn or flour tortillas
  • 1 avocado sliced
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ½ cup shredded cheddar or Mexican cheese
  • ¼ cup diced red onion
  • Fresh cilantro
  • Lime wedges
  • Optional Toppings
  • Plain Greek yogurt
  • Pico de gallo
  • Guacamole
  • Pickled onions
  • Jalapeños
  • Corn
  • Black beans
  • Extra salsa

Method
 

  1. Place the chicken breasts or thighs in the bottom of the slow cooker.
  2. Sprinkle chili powder, cumin, smoked paprika, oregano, salt, and black pepper evenly over the chicken.
  3. Add the minced garlic.
  4. Pour the salsa and chicken broth over the chicken.
  5. Add the fresh lime juice.
  6. Cover the slow cooker with the lid.
  7. Cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the chicken is fully cooked and tender.
  8. Transfer the cooked chicken to a large bowl.
  9. Shred the chicken using two forks.
  10. Return the shredded chicken to the slow cooker.
  11. Stir the chicken into the cooking juices.
  12. Let it sit for 5–10 minutes so it absorbs the flavorful liquid.
  13. Warm the tortillas in a dry skillet for about 20–30 seconds per side.
  14. Fill each tortilla with shredded chicken.
  15. Add lettuce, tomatoes, avocado, cheese, red onion, and cilantro.
  16. Finish with fresh lime juice and your favorite salsa.
  17. Serve immediately.

  • Chicken breasts create a leaner filling, while boneless chicken thighs tend to be especially tender.
  • Use mild, medium, or hot salsa depending on your preferred spice level.
  • Return the shredded chicken to the cooking juices for extra flavor and moisture.
