Method
- Pat the chicken dry and season both sides with garlic powder, onion powder, paprika, salt, and black pepper.
- Add the diced onion, carrots, and minced garlic to the bottom of the crockpot.
- Place the seasoned chicken over the vegetables.
- Whisk together the chicken broth and cream of chicken soup until smooth, then pour over the chicken.
- Cover and cook on LOW for 4–5 hours, or until the chicken reaches an internal temperature of 165°F (74°C).
- Add the rinsed rice during the final portion of cooking, following the package cooking time and liquid requirements. Keep the crockpot covered while the rice cooks.
- Stir in the frozen peas during the final few minutes of cooking.
- Remove the chicken and shred or slice it. Return it to the crockpot and gently mix with the rice and vegetables.
- For a cheesy chicken and rice crockpot, sprinkle the shredded cheddar over the finished dish. Cover for a few minutes until the cheese melts.
- Garnish with fresh parsley and serve warm.
Notes
Long-grain white rice works well for this recipe.
Rinse the rice before adding it to help remove excess starch.
Avoid cooking the rice for longer than necessary because it can become overly soft.
Boneless chicken thighs can be used instead of chicken breasts.
