Crockpot Cajun Butter Chicken Recipe

Ingredients
  

  • 2 lbs chicken breasts or thighs
  • 4 tbsp butter melted
  • 1 tbsp olive oil
  • 3 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp brown sugar optional
  • 4 garlic cloves minced
  • 1 cup tomato sauce
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 tbsp lemon juice
  • Salt & pepper
  • Parsley for garnish

Method
 

  1. Season chicken with Cajun seasoning, paprika, garlic powder, onion powder, and brown sugar.
  2. Optional: Sear quickly in a skillet with olive oil.
  3. Place chicken in crockpot.
  4. Mix butter, tomato sauce, broth, garlic, lemon juice, salt, and pepper. Pour over chicken.
  5. Cook on LOW 5–6 hours or HIGH 2½–3 hours.
  6. Stir in cream; cook 10–15 minutes more until silky.
  7. Garnish and serve.

Notes

Use coconut milk instead of cream for dairy-free.
Add bell peppers or spinach during the last 30 minutes.
Adjust spice by increasing or reducing Cajun seasoning.
