Ingredients
  

  • 2 lbs beef top sirloin steak thinly sliced
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 medium onion sliced
  • 3 garlic cloves minced
  • ½ cup low-sodium soy sauce
  • ½ cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon crushed red pepper flakes optional

Method
 

  1. Sear the beef:
  2. Heat olive oil in a large skillet over medium-high heat. Add thinly sliced sirloin and sear for 2–3 minutes per side, until browned. Transfer to the slow cooker.
  3. Add the vegetables:
  4. Layer sliced bell peppers, onions, and garlic on top of the beef.
  5. Mix the sauce:
  6. In a small bowl, whisk together soy sauce, beef broth, brown sugar, salt, and pepper. Pour the mixture into the slow cooker.
  7. Cook:
  8. Cover and cook on LOW for 5–6 hours or HIGH for 3 hours, until the beef is tender and the flavors have blended.
  9. Thicken the sauce:
  10. In the last 15 minutes, mix cornstarch and water in a separate bowl, then stir into the slow cooker. Allow to thicken before serving.
  11. Serve:
  12. Stir well and serve hot over rice, noodles, or mashed potatoes. Garnish with sesame seeds or chopped parsley if desired.

  • Use top sirloin steak for the best tenderness and flavor.
  • Want it spicy? Add sriracha or extra red pepper flakes.
