Step 1 – Prepare Chicken:
Cut the chicken into bite-sized cubes. Season lightly with salt and pepper.
Step 2 – Mix the Sauce:
In a medium bowl, whisk together soy sauce, apple juice, bourbon, brown sugar, ketchup, vinegar, garlic, and ginger until smooth.
Step 3 – Combine in Crock Pot:
Place the chicken into your slow cooker and pour the sauce mixture over the top. Stir gently to coat all pieces evenly.
Step 4 – Slow Cook:
Cover and cook on LOW for 6 hours or HIGH for 3–4 hours, until the chicken is tender and cooked through.
Step 5 – Thicken the Sauce (Optional):
If you prefer a thicker glaze, whisk cornstarch and water in a small bowl, then stir it into the sauce. Let it cook for an additional 30 minutes on HIGH.
Step 6 – Serve:
Serve hot over white rice, brown rice, noodles, or quinoa. Garnish with green onions and sesame seeds.
