This Crispy Parmesan Chicken features tender thin chicken breasts coated in a golden Parmesan breadcrumb crust and pan-fried until perfectly crisp. Ingredients
  

  • For the Chicken
  • 4 boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup finely grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Optional Garnish
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped
  • Lemon wedges

Method
 

  1. Place each chicken breast between two sheets of parchment paper or plastic wrap.
  2. Gently pound the chicken until approximately ½ inch thick. If the breasts are very large, slice them horizontally first.
  3. Set up three shallow bowls. Place flour in the first, beaten eggs in the second, and Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper in the third.
  4. Pat the chicken dry with paper towels.
  5. Dip each chicken breast into the flour, shaking off the excess.
  6. Dip the floured chicken into the beaten eggs.
  7. Press the chicken into the Parmesan breadcrumb mixture, making sure both sides are thoroughly coated.
  8. Heat olive oil and butter in a large skillet over medium heat.
  9. Once hot, carefully place the breaded chicken in the skillet.
  10. Cook for 4–6 minutes per side, depending on thickness, until golden brown and cooked through.
  11. Avoid overcrowding the pan. Cook in batches if necessary.
  12. Transfer the cooked chicken to a clean plate or wire rack.
  13. Let the chicken rest for about 5 minutes.
  14. Garnish with additional Parmesan and fresh parsley.
  15. Serve with lemon wedges and your favorite side dishes.

Notes

Use thin chicken breasts or cutlets so the chicken cooks evenly.
Pound uneven chicken breasts to an even thickness.
Press the Parmesan breadcrumb mixture firmly onto the chicken to help the crust adhere.
Don't overcrowd the skillet, as this can prevent the coating from becoming crispy.
Freshly grated Parmesan melts and browns beautifully in the coating.
For a stronger garlic flavor, add an extra ½ teaspoon of garlic powder.
Use Italian-seasoned or plain breadcrumbs depending on your preference.
Chicken should be cooked to a safe internal temperature before serving.
Let the chicken rest for a few minutes before slicing.
