Creamy Ranch Chicken CrockPot

Ingredients
  

  • 2 lbs boneless skinless chicken breasts (or shredded rotisserie chicken)
  • 1 packet ranch dressing mix
  • 1 8 oz block cream cheese, softened
  • 1 10.5 oz can cream of chicken soup
  • ½ cup milk or chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 tablespoon butter optional
  • Chopped parsley for garnish
  • Optional Add-ins:
  • ½ cup shredded cheddar cheese
  • 1 cup frozen peas or corn

Method
 

  1. Place chicken breasts (or cooked chicken) into the Crockpot.
  2. Sprinkle ranch dressing mix, garlic powder, and pepper evenly over the chicken.
  3. In a bowl, combine cream cheese, cream of chicken soup, and milk (or broth). Mix until smooth, then pour over chicken.
  4. Cover and cook on Low for 6 hours or High for 3 hours, until chicken is tender.
  5. Shred chicken using two forks right in the Crockpot and stir well to combine with the sauce.
  6. Optional: Add cheese, or vegetables. Stir and cook for another 10 minutes.
  7. Garnish with parsley and serve warm over rice, noodles, or potatoes.

Notes

  • Soften the cream cheese before adding it for a smoother texture.
  • Add milk or broth at the end if the sauce becomes too thick.
  • Use low-fat cream cheese and soup for a lighter version.
  • Add veggies like spinach, peas, or corn for extra nutrition.
  • Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
