Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 large yellow onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup beef broth low sodium
  • 1 cup heavy cream or half-and-half
  • 1 tsp garlic powder
  • ½ tsp dried thyme
  • Salt and black pepper to taste
  • 1 cup shredded mozzarella or Swiss cheese
  • ¼ cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish)

Method
 

  1. Caramelize the Onions:
  2. In a large skillet, heat butter and olive oil over medium heat. Add sliced onions and cook slowly, stirring often, until golden brown and caramelized — about 20–25 minutes.
  3. Cook the Chicken:
  4. Push onions to the side of the skillet. Season chicken with salt, pepper, garlic powder, and thyme. Sear each side for 3–4 minutes until golden brown.
  5. Make the Sauce:
  6. Add beef broth and heavy cream to the pan. Stir well and simmer for 5–7 minutes until the sauce thickens slightly.
  7. Add the Cheese:
  8. Sprinkle mozzarella and Parmesan cheese over the chicken. Cover the skillet until the cheese melts into a rich, creamy sauce.
  9. Serve:
  10. Garnish with fresh parsley. Serve hot over rice, mashed potatoes, or noodles for a comforting french onion chicken and rice style meal.
