  • 12 ounces elbow macaroni

  • 1 cup cottage cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup milk
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional Toppings
  • Extra shredded cheddar cheese
  • Chopped parsley
  • Toasted breadcrumbs
  • Crushed red pepper flakes

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Cook macaroni according to package directions until al dente. Drain and set aside.
  3. In a blender or food processor, combine cottage cheese, milk, garlic powder, onion powder, salt, and black pepper.
  4. Blend until completely smooth.
  5. Pour the blended mixture into a saucepan over medium-low heat.
  6. Stir continuously for 2–3 minutes until warmed through.
  7. Add cheddar cheese and Parmesan cheese, stirring until fully melted and creamy.
  8. Add the cooked macaroni and stir until evenly coated with the cheese sauce.
  9. Serve immediately with desired toppings.
