Method
- If using fresh corn, grill or boil until tender. Allow to cool, then cut kernels from the cob.

- In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
- In a large mixing bowl, combine corn, tomatoes, avocado, cucumber, onion, herbs, and chickpeas if using.
- Pour dressing over salad and toss gently until evenly coated.
