Ingredients
  

  • For the Salad
  • 3 cups corn kernels fresh, canned, or grilled
  • 2 ripe avocados diced
  • 2 cups cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion diced
  • 1/4 cup chopped cilantro or parsley
  • 1/2 cup chickpeas optional
  • For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Method
 

  1. If using fresh corn, grill or boil until tender. Allow to cool, then cut kernels from the cob.
  2. Dice avocados and cucumber into bite-sized pieces. Slice cherry tomatoes in half and finely dice red onion.
  3. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
  4. In a large mixing bowl, combine corn, tomatoes, avocado, cucumber, onion, herbs, and chickpeas if using.
  5. Pour dressing over salad and toss gently until evenly coated.
  6. Serve immediately for freshest flavor and texture.
