Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 3 tbsp flour
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 1 cup water
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 3 medium carrots peeled and sliced
  • 3 large potatoes diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 bay leaf

Method
 

  1. Prepare the Beef: Toss the beef cubes in flour, salt, and pepper until evenly coated.
  2. Sear the Beef: Heat olive oil in a skillet over medium-high heat. Brown the beef on all sides for 4–5 minutes to develop deep flavor.
  3. Add to Crockpot: Place browned beef, onion, garlic, carrots, and potatoes into your crock pot.
  4. Combine Broth and Seasonings: Pour in beef broth and water. Stir in tomato paste, Worcestershire sauce, thyme, paprika, and the bay leaf. Mix gently to combine.
  5. Cook: Cover and cook on Low for 8–9 hours or on High for 4–5 hours, until the beef is tender and the vegetables are soft.
  6. Add Peas: During the last 30 minutes of cooking, stir in frozen peas.
  7. Serve: Remove the bay leaf, taste, and adjust seasoning with salt and pepper. Serve hot with crusty bread or rice.
