Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 package pistachio pudding mix 3.4 oz
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter softened
  • 1 cup sugar
  • 3 large eggs
  • 1 cup milk
  • ½ cup pistachios shelled & chopped
  • 1 tsp vanilla extract
  • Optional: ½ cup mini chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan or bundt pan.
  2. In a medium bowl, combine flour, pudding mix, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla.
  5. Alternate adding dry mixture and milk until smooth.
  6. Fold in pistachios (and chocolate chips for variation).
  7. Pour batter into the prepared pan and bake 35–40 minutes.
  8. Cool completely before decorating.

Notes

  • For pistachio torte, slice layers and fill with cream or custard.
  • Top with strawberries for a refreshing strawberry pistachio cake.
  • Frost with chocolate ganache for a chocolate pistachio cake twist.
