Method
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan or bundt pan.
- In a medium bowl, combine flour, pudding mix, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla.
- Alternate adding dry mixture and milk until smooth.
- Fold in pistachios (and chocolate chips for variation).
- Pour batter into the prepared pan and bake 35–40 minutes.
- Cool completely before decorating.
Notes
- For pistachio torte, slice layers and fill with cream or custard.
- Top with strawberries for a refreshing strawberry pistachio cake.
- Frost with chocolate ganache for a chocolate pistachio cake twist.
