Preheat the oven to 350°F (175°C).
Grease three 8-inch round cake pans and line the bottoms with parchment paper.
In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt.
Add eggs, buttermilk, vegetable oil, and vanilla extract.
Mix until the batter is smooth.
Slowly pour in the hot espresso and hot water while mixing on low speed. The batter will be thin.
Divide the batter evenly between the prepared cake pans.
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Cool the cakes in the pans for about 10 minutes, then transfer them to a wire rack.
Allow the cake layers to cool completely before frosting.
To make the pistachio frosting, beat softened butter until creamy.
Gradually add powdered sugar and mix until smooth.
Add finely ground pistachios, vanilla, and salt.
Slowly add heavy cream until the frosting becomes smooth and spreadable.
Beat on medium-high speed for 2–3 minutes, until fluffy.
Place one chocolate cake layer on a cake stand.
Spread an even layer of pistachio frosting over the top.
Add the second cake layer and repeat.
Place the final cake layer on top.
Cover the cake with a thin crumb coat and refrigerate for 20–30 minutes.
Frost the top and sides with the remaining pistachio buttercream.
To make the ganache, place chopped chocolate in a heatproof bowl.
Heat the heavy cream until steaming, then pour it over the chocolate.
Let sit for 2 minutes, then stir until smooth.
Add the butter and stir until glossy.
Allow the ganache to cool slightly.
Pour the ganache over the top of the chilled cake and gently spread toward the edges.
Decorate with chopped pistachios, whole pistachios, and chocolate shavings.
Chill briefly if needed, then slice and serve.
