Ingredients
  

  • Brownie Layer:
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • Chocolate Mousse Layer:
  • 1 cup heavy cream cold
  • ½ cup semi-sweet or dark chocolate chips
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Optional Toppings:
  • Whipped cream
  • Chocolate curls or shavings
  • Fresh berries

Method
 

  1. Prepare the Brownie Layer:
  2. Preheat oven to 350°F (175°C). Grease an 8x8-inch pan and line with parchment paper. Melt butter in a saucepan, then remove from heat. Stir in sugar, eggs, and vanilla until smooth. Add cocoa powder, flour, salt, and baking powder, mixing just until combined.
  3. Bake:
  4. Pour brownie batter into the pan and bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely before adding mousse.
  5. Make the Chocolate Mousse:
  6. Melt chocolate chips in the microwave in 30-second intervals, stirring between each. Cool slightly. In a chilled bowl, whip heavy cream, sugar, and vanilla until soft peaks form. Gently fold in melted chocolate until smooth and fluffy.
  7. Assemble:
  8. Spread the mousse evenly over the cooled brownie layer. Smooth the top with a spatula.
  9. Chill and Serve:
  10. Refrigerate for at least 2 hours, or until the mousse is firm. Slice and garnish with whipped cream, chocolate shavings, or berries before serving.
