Method
- Pat the chicken thighs dry and season with salt, pepper, paprika, and thyme.
- Add sliced onions and garlic to the bottom of the crockpot.
- Place the seasoned chicken thighs on top.
- Pour chicken broth over the chicken and drizzle with olive oil.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Check that the chicken is fully cooked and tender.
- Optional: Broil for 3–5 minutes for crispy edges before serving.
Notes
- You can substitute bone-in thighs for a richer flavor (slow cooker chicken thighs bone in).
- Add vegetables like carrots or potatoes for a complete one-pot meal.
- For a creamy version, stir in cream or cream cheese at the end.
