Chicken Stroganoff

Ingredients
  

  • lbs boneless skinless chicken breasts, sliced
  • 2 tbsp olive oil or butter
  • 1 medium onion diced
  • 8 oz mushrooms sliced
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 cup chicken broth
  • ¾ cup sour cream or plain Greek yogurt
  • ½ tsp salt
  • ½ tsp black pepper
  • Fresh parsley for garnish

Method
 

  1. Cook Chicken
  2. Heat oil or butter in a large skillet over medium heat. Add chicken and cook until lightly browned and cooked through. Remove and set aside.
  3. Sauté Vegetables
  4. In the same skillet, add onion and mushrooms. Cook until softened and lightly golden.
  5. Add Garlic & Paprika
  6. Stir in garlic and paprika. Cook for 30 seconds until fragrant.
  7. Deglaze Pan
  8. Pour in chicken broth, scraping up any browned bits. Simmer for 3–5 minutes to slightly reduce.
  9. Make It Creamy
  10. Lower heat and stir in sour cream or Greek yogurt until smooth.
  11. Combine & Finish
  12. Return chicken to the skillet. Simmer gently for 5 minutes until heated through. Adjust seasoning if needed.

Notes

  • Greek yogurt creates a lighter, healthier version.
  • Avoid boiling after adding sour cream to prevent curdling.
  • Chicken thighs or ground chicken can be used as substitutes.
  • Store leftovers in an airtight container for up to 4 days.
  • Reheat gently on low heat.
