Method
- Preheat the oven to 375°F (190°C). Lightly grease a large baking dish.
- Add the chicken, cream of chicken soup, chicken broth, frozen vegetables, garlic powder, onion powder, dried parsley, thyme, black pepper, and salt to the baking dish.
- Stir until the chicken and vegetables are evenly coated in the creamy mixture.
- Arrange the frozen or refrigerated dumplings evenly over the top.
- Brush the dumplings lightly with melted butter.
- Cover the baking dish tightly with aluminum foil.
- Bake for 35–40 minutes, or until the chicken is cooked through and the dumplings are tender.
- Remove the foil and bake for another 10–15 minutes, until the dumplings are lightly golden.
- If using raw chicken, make sure the thickest pieces reach 165°F (74°C).
- Remove from the oven and let the casserole rest for about 5 minutes.
- Garnish with fresh parsley and optional shredded cheddar cheese.
- Serve warm with plenty of the creamy sauce.
Notes
Frozen dumplings can usually be added directly to the casserole without thawing.
Cooking times can vary depending on the type and brand of dumplings.
Chicken thighs can be substituted for chicken breasts for a richer, more tender result.
Leftover cooked or rotisserie chicken can be used to make this recipe even faster.
Add extra vegetables such as peas, carrots, corn, mushrooms, or green beans.
If the sauce is too thick before baking, add a little extra chicken broth.
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheat gently in the oven or microwave until heated through.
