Ingredients
  

  • 500 g chicken cut into pieces
  • 2 tablespoons oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 tomatoes chopped or 1 cup tomato puree
  • 1/2 cup yogurt or coconut milk
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Method
 

  1. Heat oil in a large pan over medium heat.
  2. Add chopped onion and cook until soft and golden.
  3. Stir in garlic and ginger, cooking until fragrant.
  4. Add turmeric, chili powder, cumin, and coriander, and cook briefly.
  5. Stir in tomatoes or tomato puree and cook until thickened.
  6. Add chicken pieces and mix well to coat with the sauce.
  7. Pour in yogurt or coconut milk and stir to combine.
  8. Cover and simmer for 20–25 minutes until chicken is tender.
  9. Sprinkle garam masala, garnish with cilantro, and serve warm.

Notes

Use fresh spices for the best flavor
Adjust spice level to taste
Add water if the curry becomes too thick
Use coconut milk for a dairy-free version
