Chicken Broccoli Rice Casserole

Ingredients
  

  • 2 cups cooked white rice
  • 2 cups cooked chicken shredded or cubed
  • 3 cups broccoli florets
  • 1 can 10.5 oz cream of chicken soup
  • ½ cup sour cream
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • cups shredded cheddar cheese divided
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Bring a pot of water to a boil. Add the broccoli and cook for 2–3 minutes, until slightly tender. Drain well.
  3. In a large bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, paprika, black pepper, and salt.
  4. Add the cooked rice, chicken, and broccoli to the creamy mixture.
  5. Stir in 1 cup of the cheddar cheese until everything is evenly combined.
  6. Transfer the mixture to the prepared baking dish and spread evenly.
  7. Sprinkle the remaining cheddar cheese, mozzarella, and Parmesan over the top.
  8. Cover loosely with foil and bake for 20 minutes.
  9. Remove the foil and bake for another 10–15 minutes, until the casserole is hot, bubbling, and the cheese is golden.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • Rotisserie chicken is an excellent shortcut for this recipe.
  • Leftover cooked rice works especially well.
  • Frozen broccoli can be used; thaw and drain it thoroughly first.
  • Don't overcook the broccoli before baking so it retains some texture.
  • Sharp cheddar can be used for a stronger cheese flavor.
