Ingredients
  

  • For Chicken Marinade:
  • 500 g chicken bone-in or boneless
  • 1 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • For Rice:
  • 2 cups basmati rice
  • 4 cups water
  • 2 bay leaves
  • 4 cloves
  • 2 cardamom pods
  • 1 cinnamon stick
  • For Biryani:
  • 2 onions thinly sliced
  • 2 tomatoes chopped
  • 2 tablespoons oil or ghee
  • Fresh coriander leaves chopped
  • Fresh mint leaves chopped
  • ½ cup milk with saffron optional

Method
 

  1. Marinate chicken with yogurt, ginger-garlic paste, spices, and salt. Let it rest for at least 30 minutes.
  2. Cook basmati rice with whole spices until about 70% done. Drain and set aside.
  3. Heat oil or ghee in a pot and sauté onions until golden brown.
  4. Add tomatoes and cook until soft.
  5. Add marinated chicken and cook until partially done.
  6. Layer partially cooked rice over the chicken mixture.
  7. Sprinkle coriander, mint, and saffron milk on top.
  8. Cover tightly and cook on low heat (dum) for 20–25 minutes.
  9. Let it rest for a few minutes, then gently mix.
  10. Serve hot and enjoy.

Notes

Use basmati rice for the best fluffy texture.
Do not overcook rice before layering.
