Ingredients

  • 2 cups cooked chicken breast diced or shredded
  • 3 cups corn kernels fresh, canned, or grilled
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion diced
  • 1/4 cup chopped cilantro or parsley
  • For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Method
 

  1. Cook chicken breast until fully cooked, then dice or shred into bite-sized pieces.
  2. If using fresh corn, grill or boil until tender and allow to cool.
  3. Dice avocados and cucumber, halve tomatoes, and finely dice red onion.
  4. In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
  5. In a large bowl, combine chicken, corn, avocado, tomatoes, cucumber, onion, and herbs.
  6. Pour dressing over salad and toss gently until evenly coated.
