Chicken and Pineapple Tacos

These juicy Chicken and Pineapple Tacos combine sweet caramelized pineapple with seasoned chicken for a vibrant, easy weeknight meal that everyone loves.

Ingredients
  

  • 1 lb chicken breasts sliced thin
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp cumin
  • Salt & pepper
  • Juice of 1 lime
  • 2 cups pineapple chunks
  • 1 tbsp honey
  • 1 tsp soy sauce optional
  • 10 tortillas
  • ½ cup diced red onion
  • 1 cup shredded cabbage
  • Cilantro & taco sauce

Method
 

  1. Marinate Chicken (5 minutes) – Mix chicken with oil, spices, lime, salt, and pepper.
  2. Cook Pineapple (6–8 minutes) – Sear pineapple with honey and soy until caramelized. Remove.
  3. Cook Chicken (8–10 minutes) – Sauté chicken until cooked through and slightly browned.
  4. Warm Tortillas (2–3 minutes).
  5. Assemble Tacos – Fill tortillas with chicken, pineapple, cabbage, onion, cilantro, and sauce.

Notes

Add jalapeños for spice.
Store leftovers separately up to 2 days.
Great with avocado or pico de gallo.
