Chicken and Broccoli Nuggets

Crispy on the outside, juicy on the inside — these Chicken and Broccoli Nuggets are the perfect healthy twist on a family favorite. Made with tender chicken and nutritious broccoli, they’re a quick and delicious choice for easy dinners, meal prep, or snacking.

Ingredients
  

  • 1 lb 450 g ground chicken breast
  • 1 cup steamed broccoli florets finely chopped
  • ½ cup breadcrumbs plus more for coating
  • ½ cup grated Parmesan cheese
  • 1 egg lightly beaten
  • 2 cloves garlic minced
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • Olive oil spray for baking or air frying

Method
 

  1. Prepare Broccoli:
  2. Steam broccoli until tender, then finely chop or pulse in a food processor.
  3. Make Nugget Mixture:
  4. In a large bowl, mix ground chicken, chopped broccoli, Parmesan, breadcrumbs, egg, garlic, onion powder, salt, and pepper until evenly combined.
  5. Shape Nuggets:
  6. Scoop small portions (about 1 tablespoon each) and shape into nugget-sized patties. Coat each lightly in extra breadcrumbs.
  7. Cook:
  8. To Bake: Preheat oven to 400°F (200°C). Place nuggets on a parchment-lined baking sheet, spray with olive oil, and bake 18–20 minutes, flipping halfway.
  9. To Air Fry: Cook at 380°F (190°C) for 10–12 minutes until golden and crisp.
  10. Serve:
  11. Cool slightly before serving with your favorite dipping sauce or side dish.

Notes

  • For a cheesier version, add ¼ cup shredded cheddar to the mix.
  • To freeze: Shape nuggets and freeze on a tray before transferring to a freezer bag. Cook straight from frozen by adding a few extra minutes.
  • Substitute ground turkey or shredded cooked chicken for variation.
