  • 1 ½ cups rolled oats
  • ¾ cup all-purpose flour or whole wheat flour for a healthier version
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ cup melted butter or coconut oil for dairy-free
  • cup brown sugar or maple syrup for natural sweetness
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced apples peeled or unpeeled
  • Optional add-ins:
  • ¼ cup chopped walnuts or pecans
  • 2 tablespoons raisins or chocolate chips
  • Extra oats or brown sugar for topping

Method
 

  1. Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it with butter.
  2. Combine the dry ingredients: In a large mixing bowl, stir together rolled oats, flour, baking powder, cinnamon, nutmeg, and salt.
  3. Mix the wet ingredients: Add melted butter, brown sugar, egg, and vanilla extract. Stir until well combined.
  4. Fold in the apples: Gently add the diced apples (and any optional add-ins) until evenly distributed throughout the batter.
  5. Spread and bake: Pour the mixture into the prepared pan and smooth the top. Bake for 25–30 minutes, or until golden brown and firm around the edges.
  6. Cool and slice: Allow to cool in the pan before cutting into bars. Serve warm or at room temperature.
