Preheat the Oven
Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
Cook the Beef
In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess fat and season with garlic powder, paprika, salt, and pepper.
Mix Ingredients
In a large mixing bowl, combine the cooked beef mixture, uncooked rice, cream of mushroom soup, sour cream, 1 cup shredded cheese, and beef broth. Stir well to combine.
Assemble the Casserole
Spread the mixture evenly in the prepared baking dish. Cover tightly with aluminum foil.
Bake
Bake for 50–55 minutes or until the rice is tender and the casserole is creamy.
Add the Topping
Remove the foil, sprinkle the remaining cheese (and optional breadcrumbs) on top, and bake uncovered for an additional 10 minutes until the cheese is melted and golden.
Serve
Let the casserole rest for 5 minutes before serving. Garnish with parsley if desired.
