Cheesy Hamburger Rice Casserole

Ingredients
  

  • For the Casserole:
  • 1 lb ground beef lean 85% preferred
  • 1 medium onion diced
  • 1 cup uncooked white rice long-grain or jasmine
  • 1 ½ cups beef broth or water
  • 1 can 10.5 oz cream of mushroom soup (or cream of chicken)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • Optional Add-Ins:
  • ½ cup frozen peas corn, or diced bell peppers
  • ½ cup crushed crackers or breadcrumbs for topping

Method
 

  1. Preheat the Oven
  2. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  3. Cook the Beef
  4. In a large skillet over medium heat, cook ground beef and onion until browned. Drain excess fat and season with garlic powder, paprika, salt, and pepper.
  5. Mix Ingredients
  6. In a large mixing bowl, combine the cooked beef mixture, uncooked rice, cream of mushroom soup, sour cream, 1 cup shredded cheese, and beef broth. Stir well to combine.
  7. Assemble the Casserole
  8. Spread the mixture evenly in the prepared baking dish. Cover tightly with aluminum foil.
  9. Bake
  10. Bake for 50–55 minutes or until the rice is tender and the casserole is creamy.
  11. Add the Topping
  12. Remove the foil, sprinkle the remaining cheese (and optional breadcrumbs) on top, and bake uncovered for an additional 10 minutes until the cheese is melted and golden.
  13. Serve
  14. Let the casserole rest for 5 minutes before serving. Garnish with parsley if desired.
