Cheesy Ground Beef and Rice Casserole

Ingredients
  

  • 1 lb ground beef
  • 1 cup long-grain white rice uncooked
  • 1 small onion diced
  • 2 cloves garlic minced
  • cups beef broth
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Method
 

  1. Preheat Oven
  2. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  3. Cook Ground Beef
  4. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Drain excess fat.
  5. Add Aromatics
  6. Stir in diced onion and garlic. Cook for 2–3 minutes until softened.
  7. Assemble Casserole
  8. In the baking dish, combine uncooked rice, beef broth, cream of mushroom soup, paprika, salt, and pepper. Stir well.
  9. Add Beef
  10. Spread the cooked beef mixture evenly over the rice mixture.
  11. Bake Covered
  12. Cover tightly with foil and bake for 35 minutes.
  13. Add Cheese & Finish
  14. Remove foil, sprinkle cheddar and mozzarella evenly on top, and bake uncovered for 10 minutes, until cheese is melted and bubbly.
  15. Rest & Serve
  16. Let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

  • Ground turkey or chicken can be used as substitutes.
  • Brown rice may be used but will require extra liquid and time.
  • Add frozen vegetables for a one-dish meal.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat covered to keep the casserole moist.
