Cajun Chicken and Garlic Parmesan Linguine

Ingredients
  

  • 12 oz linguine
  • 1 lb boneless skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan
  • 1 tbsp lemon juice
  • Salt & pepper to taste
  • 2 tbsp chopped parsley optional

Method
 

  1. Cook linguine according to package directions; drain, reserving ½ cup pasta water.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high; sear chicken 5–6 minutes per side until cooked. Remove and rest.
  4. Add butter to pan; sauté garlic 30–45 seconds.
  5. Stir in chicken broth; simmer 2 minutes.
  6. Add cream and Parmesan; cook until thickened.
  7. Toss linguine in sauce; add pasta water if needed.
  8. Slice chicken and place on top; squeeze in lemon juice and garnish with parsley.

Notes

Adjust Cajun spice to preference.
Add spinach or mushrooms for extra veggies.
For lighter sauce, swap half the cream for milk.
