- Heat olive oil in a large pot over medium heat (2 minutes).
- Add onion, garlic, carrots, and celery; sauté until softened (5 minutes).

- Add diced tomatoes, broth, potatoes, thyme, paprika, and bay leaves.

Notes
- For a heartier version, add ground beef or sausage.
- To make it lighter, skip the potatoes and use more vegetables.
- Use a crockpot for easy cooking: let it simmer on low for 6–8 hours.
