Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 1 medium head of cabbage chopped
  • 1 can 14 oz diced tomatoes
  • 6 cups vegetable or chicken broth
  • 2 potatoes cubed (optional for thickness)
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large pot over medium heat (2 minutes).
  2. Add onion, garlic, carrots, and celery; sauté until softened (5 minutes).
  3. Stir in cabbage and cook until slightly wilted (3 minutes).
  4. Add diced tomatoes, broth, potatoes, thyme, paprika, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer (30–35 minutes).
  6. Remove bay leaves, season with salt and pepper, garnish with parsley, and serve hot.

Notes

  • For a heartier version, add ground beef or sausage.
  • To make it lighter, skip the potatoes and use more vegetables.
  • Use a crockpot for easy cooking: let it simmer on low for 6–8 hours.
  • Freeze leftovers in airtight containers for quick meals later.
