Blueberry Waffles

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • cups buttermilk
  • 2 large eggs
  • cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • cups fresh blueberries or frozen, not thawed
  • Butter or nonstick cooking spray for the waffle iron
  • Optional Toppings
  • Maple syrup
  • Fresh blueberries
  • Powdered sugar
  • Whipped cream
  • Greek yogurt
  • Lemon zest
  • Chopped pecans or walnuts

Method
 

  1. Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with butter or nonstick spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are perfectly fine.
  5. Gently fold the blueberries into the batter.
  6. Spoon the recommended amount of batter onto the hot waffle iron and close the lid.
  7. Cook for 4–6 minutes, or according to your waffle maker's instructions, until the waffles are golden brown and crisp.
  8. Carefully remove the waffles and repeat with the remaining batter.
  9. Serve immediately with your favorite toppings.

Notes

  • Fresh blueberries provide the best texture, but frozen blueberries can be used without thawing.
  • Let the batter rest for 5 minutes before cooking for fluffier waffles.
  • Avoid overmixing the batter to keep the waffles light and tender.
  • Keep cooked waffles warm in a 200°F (95°C) oven while preparing the remaining batches.
  • Freeze cooled waffles in a freezer-safe bag for up to 3 months and reheat in a toaster for crispy results.
