Ingredients
  

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup butter melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups blueberries fresh or frozen
  • Optional Topping Crumble/Streusel:
  • ¼ cup brown sugar
  • 2 tablespoons flour
  • 2 tablespoons butter softened

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tin with liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, mix sugar, melted butter, eggs, milk, and vanilla extract.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined.
  5. Gently fold in blueberries.
  6. Divide batter evenly into muffin cups.
  7. Prepare crumble topping (if using) and sprinkle over muffins.
  8. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  9. Let cool slightly before serving.

Notes

Toss blueberries in a little flour to prevent sinking.
