Ingredients
  

  • 1 ½ lbs boneless skinless chicken breast (cubed)
  • 2 tbsp olive oil or coconut oil
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp curry powder or yellow curry powder for yellow curry chicken
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 can 14 oz coconut milk
  • 1 cup chicken broth
  • Salt & pepper to taste
  • Fresh cilantro for garnish
  • Steamed rice for serving, because chicken curry with rice is a classic!

Method
 

  1. Heat oil in a large pan over medium heat. Sauté onions until golden.
  2. Add garlic and ginger, cooking until fragrant.
  3. Stir in curry powder, turmeric, cumin, and paprika. Toast spices for 1 minute.
  4. Add chicken pieces, season with salt and pepper, and cook until lightly browned.
  5. Pour in coconut milk and chicken broth. Simmer for 20 minutes until chicken is cooked and sauce thickens.
  6. Garnish with fresh cilantro and serve hot with rice.
