  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven:
  2. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  3. Mix dry ingredients:

  6. In a large bowl, beat butter (or oil) and brown sugar until smooth and creamy.
  7. Add wet ingredients:
  8. Mix in eggs one at a time, then add mashed bananas, vanilla extract, and sour cream. Stir until fully combined.
  9. Combine wet and dry:
  10. Gradually add the dry ingredients into the wet mixture. Stir gently until just combined — avoid overmixing.
