Beef Tips and Gravy

Tender beef tips are simmered in a rich, savory homemade gravy with onions, garlic, Worcestershire sauce, and warm seasonings. This easy comfort-food dinner is delicious served over mashed potatoes, rice, or egg noodles and makes a hearty choice for weeknight meals or Sunday dinner.

Ingredients
  

  • 2 pounds beef stew meat or sirloin tips cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt or to taste
  • 2 tablespoons unsalted butter
  • 8 ounces mushrooms sliced, optional
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Pat the beef dry with paper towels and season with salt, black pepper, paprika, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Add the beef in batches and sear for about 2–3 minutes per side until browned. Transfer the beef to a plate.
  4. Reduce the heat to medium and add butter and diced onion to the same pan. Cook for 3–4 minutes until softened.
  5. Add minced garlic and optional mushrooms. Cook for another 1–2 minutes.
  6. Sprinkle the flour over the vegetables and stir continuously for about 1 minute.
  7. Slowly pour in the beef broth while whisking to create a smooth gravy.
  8. Stir in Worcestershire sauce and dried thyme.
  9. Return the browned beef and any accumulated juices to the pan.
  10. Bring the mixture to a gentle simmer, then reduce the heat to low.
  11. Cover and cook for 45–60 minutes, stirring occasionally, until the beef is tender and the gravy has thickened.
  12. Taste and adjust the salt and pepper as needed.
  13. Garnish with fresh parsley and serve warm over mashed potatoes, rice, or egg noodles.

Notes

Brown the beef in batches so it develops a flavorful crust.
Tougher cuts of beef may need additional simmering time to become tender.
Add a splash of beef broth if the gravy becomes too thick.
Simmer uncovered for a few minutes if the gravy needs additional thickening.
Mushrooms are optional but add excellent savory flavor.
