Method
- Pat the beef dry and season with salt, black pepper, paprika, garlic powder, and onion powder.
- Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
- Brown the beef in batches for about 2–3 minutes per side. Transfer the beef to a plate.
- Reduce the heat to medium and melt the butter. Add the diced onion and cook for 3–4 minutes until softened.
- Add the minced garlic and optional mushrooms. Cook for another 1–2 minutes.
- Sprinkle the flour over the vegetables and stir for about 1 minute.
- Slowly pour in the beef broth while stirring. Add Worcestershire sauce and dried thyme.
- Return the browned beef and any juices to the pot.
- Bring to a gentle simmer, cover, and cook on low for 45–60 minutes, or until the beef is tender.
- Stir in the egg noodles and cook according to the package directions, usually 7–10 minutes.
- Reduce the heat to low and stir in the heavy cream and sour cream until smooth.
- Avoid boiling after adding the dairy. Taste and adjust the seasonings.
- Garnish with fresh parsley and serve warm.
