Ingredients
  

  • 2 cups cooked rice white or brown
  • 2 chicken breasts or thighs diced
  • 1 cup BBQ sauce
  • 2 tablespoons honey optional
  • 1 tablespoon olive oil
  • 1/2 onion chopped
  • 2 cloves garlic minced
  • 1/2 cup corn optional
  • Salt and pepper to taste
  • 1/2 teaspoon paprika

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken, season with salt, pepper, and paprika, and cook until browned and fully cooked.
  3. Add chopped onion and garlic, cooking until softened and fragrant.
  4. Stir in BBQ sauce and honey (if using), mixing well to coat the chicken.
  5. Add cooked rice and stir until everything is combined evenly.
  6. Mix in corn or any optional vegetables.
  7. Cook for another 2–3 minutes until heated through.
  8. Serve warm and enjoy.
