Ingredients
  

  • 3 ripe bananas mashed
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional Add-ins:
  • ½ cup chopped walnuts or pecans
  • ½ cup chocolate chips
  • Optional Crumb Topping:
  • ¼ cup brown sugar
  • 2 tablespoons flour
  • 2 tablespoons butter softened

Method
 

  1. Preheat oven to 180°C (350°F) and line a muffin tin with liners.
  2. In a bowl, mash bananas until smooth.
  3. Add melted butter, sugar, eggs, and vanilla extract; mix well.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually combine dry ingredients with wet ingredients.
  6. Fold in optional add-ins like nuts or chocolate chips.
  7. Divide batter evenly into muffin cups.
  8. Prepare crumb topping (if using) and sprinkle over muffins.
  9. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  10. Let cool slightly before serving.

Notes

Use very ripe bananas with brown spots for the best flavor.
Do not overmix to keep muffins light and fluffy.
