Ingredients
  

  • 2 large chicken breasts halved and pounded thin
  • 1 cup breadcrumbs panko preferred
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 large eggs beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Optional Add-ins:
  • Fresh basil for garnish
  • Red pepper flakes for heat

Method
 

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Season chicken with salt and pepper.
  3. In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
  4. In another bowl, beat eggs.
  5. Dip each chicken piece into eggs, then coat with breadcrumb mixture.
  6. Place chicken on baking sheet and drizzle with olive oil.
  7. Bake for 20 minutes or until golden and cooked through.
  8. Remove from oven, top with marinara sauce and mozzarella cheese.
  9. Return to oven and bake for 5–10 minutes until cheese is melted and bubbly.
  10. Garnish with fresh basil and serve warm.

Use panko breadcrumbs for extra crispiness.
