Ingredients
  

  • Chicken
  • 2 –4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Apple Honey Dijon Sauce
  • 1 large apple thinly sliced
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard optional
  • 1 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 2 garlic cloves minced
  • ½ tsp dried rosemary or thyme

Method
 

  1. Prep the Chicken
  2. Preheat oven to 400°F (200°C).
  3. Pat chicken breasts dry, then rub with olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Make the Honey Dijon Apple Sauce
  5. In a bowl, whisk together honey, Dijon mustard, whole-grain mustard, apple cider vinegar, olive oil, minced garlic, and dried herbs.
  6. Slice the apple thinly and set aside.
  7. Assemble the Dish
  8. Place seasoned chicken breasts into a lightly greased baking dish.
  9. Arrange sliced apples around and on top of the chicken.
  10. Pour the honey Dijon mixture evenly over the chicken and apples.
  11. Bake
  12. Bake in preheated oven for 22–28 minutes, or until internal temperature reaches 165°F (74°C).
  13. Broil for the last 2 minutes if you want the top extra caramelized (optional).
  14. Rest & Serve
  15. Let the chicken rest for 5 minutes before slicing.
  16. Spoon the apples and thickened pan sauce over the top and serve.

Notes

 
Thinly slice apples so they soften and caramelize properly.
For richer sweetness, replace 1 tbsp honey with maple syrup.
Chicken thighs or drumsticks also work—bake for 30–35 minutes.
Excellent served with rice, potatoes, roasted veggies, or quinoa.
To add heat, sprinkle chili flakes into the sauce before baking.
