Method
- In a mixing bowl, beat softened cream cheese until smooth.
- Add powdered sugar and mix well.
- Pour in Baileys and continue mixing until fully incorporated.
- Stir in crushed graham crackers until mixture thickens.
- Chill mixture in refrigerator for 45–60 minutes.
- Roll into small truffle-size balls.
- Dip each ball into melted chocolate or roll in toppings.
- Set on parchment paper and chill for 10–15 minutes before serving.
Notes
Add more cracker crumbs if mixture feels too soft.
Use flavored Irish cream varieties for extra fun.
To make alcohol-free: substitute coffee creamer or vanilla extract.
