Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • ½ cup unsalted butter melted
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk or 1 cup milk + 1 tsp vinegar
  • 2 medium apples peeled and diced
  • Optional Crumb Topping:
  • 3 tbsp butter cold
  • ½ cup flour
  • ¼ cup sugar
  • ½ tsp cinnamon

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin pan with 12 paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk melted butter, brown sugar, granulated sugar, eggs, and vanilla until smooth. Stir in buttermilk.
  4. Gently fold dry ingredients into wet until just combined. Do not overmix.
  5. Add diced apples and mix lightly.
  6. Spoon batter into muffin cups, filling about ¾ full.
  7. If using, sprinkle crumb topping over each muffin.
  8. Bake for 20–25 minutes or until a toothpick inserted comes out clean.
  9. Let cool for 5 minutes, then transfer to a wire rack.

Notes

  • Use tart apples (Granny Smith) for balance or sweet apples (Honeycrisp) for richness.
  • For healthier muffins, swap half the flour with oat flour or add rolled oats.
  • Freeze leftovers in an airtight container for up to 3 month
