  • Dry Ingredients:
  • 2 cups 250 g all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg optional
  • Wet Ingredients:
  • ½ cup 115 g unsalted butter, softened
  • 1 cup 200 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup 120 ml milk or yogurt
  • Apples:
  • 2 large apples Honeycrisp, Fuji, or Granny Smith, peeled and chopped
  • 1 tbsp lemon juice
  • Topping Optional but Recommended:
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp melted butter

Method

  1. Preheat Oven:
  2. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or square pan.
  3. Prepare Apples:
  4. Peel and chop apples into small cubes, toss with lemon juice to prevent browning, and set aside.
  5. Mix Dry Ingredients:
  6. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  7. Cream Butter and Sugar:
  8. In a large mixing bowl, beat butter and sugar with a hand mixer until light and fluffy (about 2–3 minutes).
  9. Add Eggs and Vanilla:
  10. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  11. Combine Wet and Dry:
  12. Add dry ingredients in two batches, alternating with milk or yogurt. Mix until smooth — do not overmix.
  13. Add Apples:
  14. Fold in the chopped apples gently using a spatula.
  15. Pour and Top:
  16. Pour batter into prepared pan. Mix topping ingredients and sprinkle evenly on top.
  17. Bake:
  18. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  19. Cool and Serve:
  20. Let the cake cool slightly before slicing. Serve warm or at room temperature with a dusting of powdered sugar, a scoop of vanilla ice cream, or whipped cream.
