Ingredients

  • 1 15-ounce can whole kernel corn, drained
  • 1 15-ounce can creamed corn
  • 1 cup sour cream
  • ½ cup melted butter 1 stick
  • 1 8.5-ounce box Jiffy corn muffin mix
  • Optional: 1 cup shredded cheddar cheese for extra cheesy flavor

Method

  1. Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish or medium casserole pan.
  2. Combine ingredients: In a large mixing bowl, add both cans of corn, sour cream, melted butter, and the corn muffin mix. Stir gently until just combined.
  3. Add cheese (optional): Fold in shredded cheddar if desired for a cheesy version.
  4. Bake: Pour the mixture into the greased dish and spread evenly. Bake for 45–50 minutes, or until the top is golden brown and slightly crisp around the edges.
  5. Cool and serve: Let the casserole sit for 5–10 minutes before serving.

Notes

  • Don’t overmix the batter; this keeps the casserole soft and moist.
  • Add diced jalapeños, green onions, or cooked bacon for a savory kick.
  • Make ahead by mixing ingredients, covering, and refrigerating overnight. Bake before serving.
  • Leftovers keep in the fridge for up to 3 days or can be frozen for 1 month.
