Ingredients:

  • 1 lb. ground beef
  • 1 can of black beans, drained and rinsed
  • 1 packet of taco seasoning
  • 1 can of diced tomatoes
  • 1/2 cup of water
  • 1 bag of corn chips
  • 2 cups of shredded cheddar cheese
  • Optional toppings: diced tomatoes, diced onions, sliced jalapenos, sour cream, guacamole, salsa, etc.

Instructions:

  1. Preheat your oven to 350°F.
  2. Brown the ground beef in a large skillet over medium-high heat until it’s no longer pink.
  3. Drain any excess grease from the beef and add the can of black beans to the skillet. Stir until well combined.
  4. Sprinkle the packet of taco seasoning over the beef and bean mixture. Add the can of diced tomatoes and 1/2 cup of water. Stir until everything is evenly coated.
  5. Reduce the heat to low and let the mixture simmer for 10-15 minutes.
  6. While the beef mixture is simmering, crush the corn chips into bite-sized pieces and spread them evenly in the bottom of a 9×13 inch baking dish.
  7. Once the beef mixture is done, spoon it over the corn chips.
  8. Sprinkle the shredded cheddar cheese on top of the beef mixture.
  9. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes.
  11. Serve hot, with your choice of toppings.
