Tres Leches Cake Recipe

Ingredients:

For the Cake:

  • Cooking spray
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 5 large eggs, separated
  • 1 1/4 cups granulated sugar, divided
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk
  • 4 tablespoons butter, melted and cooled

For the Filling:

  • 1 (14-oz.) can sweetened condensed milk
  • 1 (12-oz.) can evaporated milk
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract

For the Whipped Cream:

  • 2 cups heavy cream
  • 1/2 cup granulated sugar

For Serving:

  • 1/4 cup cinnamon-sugar
  • Sliced strawberries or other fresh fruit

Instructions:

For the Cake:

  1. Preheat the oven to 350°F (175°C) and grease a 9″x13″ baking pan with cooking spray.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, and kosher salt.
  3. In another large bowl, using a hand mixer, beat the egg yolks and 1 cup of granulated sugar until stiff ribbons trail behind the beaters. Add the vanilla extract and set aside.
  4. In a third large bowl, using a hand mixer, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
  5. Add the yolk mixture to the dry ingredients and beat together. Add in the milk and melted butter and beat until well combined. Gently fold in the beaten egg whites until just combined. Pour the batter into the prepared pan and bake until a toothpick inserted into the middle of the cake comes out clean, about 30 minutes. Let it cool.

For the Filling:

  1. In a medium bowl, whisk together the sweetened condensed milk, evaporated milk, milk, and vanilla extract.
  2. Using a fork, poke holes all over the cake, then pour the milk mixture evenly over the cake. Cover and refrigerate until all of the mixture is absorbed, at least 1 hour.

For the Whipped Cream:

  1. When ready to serve, make the whipped cream. In a large bowl using a hand mixer, beat together the heavy cream and granulated sugar until stiff peaks form.
  2. Frost the cake with the whipped cream and sprinkle with cinnamon-sugar.
  3. Serve the Tres Leches Cake with sliced strawberries or other fresh fruit for a delicious treat.
