For the Filling:

  • 4 ounces of cream cheese, softened
  • 1 (14-ounce) can of sweetened condensed milk
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon of kosher salt
  • 1 cup of Cool Whip
  • 3 cups of toasted coconut, divided
  • 1 cup plus 2 tablespoons of caramel, melted and divided
  • 1/4 cup of mini chocolate chips

Directions:

Step 1: Let’s start with the crust. In a food processor, pulse the Nilla wafers until they turn into fine crumbs. Transfer the crumbs to a bowl and add the melted butter and granulated sugar. Stir until the mixture is well combined. Grease a 9-inch pie plate and press the crust mixture firmly into it.

Step 2: Now, onto the filling. In a large bowl, using a hand mixer, beat the softened cream cheese until it’s smooth. Mix in the sweetened condensed milk, vanilla extract, and kosher salt until all the ingredients are fully incorporated. Gently fold in the Cool Whip to create a light and creamy filling.

Step 3: Create the middle layer by mixing 2 cups of toasted coconut with 1 cup of melted caramel in a medium-sized bowl.

Step 4: Pour half of the cream cheese mixture into the prepared pie pan and spread it out evenly. Next, cover this layer with the coconut caramel mixture, ensuring it reaches the edges to form a delicious layer.

Step 5: Top the coconut caramel layer with the remaining cream cheese mixture, creating a luscious contrast of flavors and textures. Sprinkle the remaining 1 cup of toasted coconut and mini chocolate chips on top. Drizzle the pie with the remaining 2 tablespoons of melted caramel and some melted chocolate for an extra layer of decadence.

Step 6: Freeze the pie until it becomes firm, which typically takes about 4 hours.

The result? A mouthwatering Toasted Coconut Caramel Cream Pie that’s a true dessert masterpiece. Enjoy every heavenly bite!
