Here’s a recipe for what I think is a delicious beef stew:

Ingredients:

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Heat the vegetable oil and butter in a large Dutch oven or heavy-bottomed pot over medium heat.
  2. Add the beef cubes in batches and brown them on all sides. Remove from the pot and set aside.
  3. Add the onion and garlic to the pot and cook until they are soft and fragrant.
  4. Stir in the tomato paste and cook for a few minutes until it darkens in color.
  5. Add the beef broth, red wine, bay leaf, thyme, and browned beef cubes. Bring to a boil, then reduce the heat to low and let simmer for 2 hours, or until the beef is tender.
  6. Add the carrots and potatoes to the pot and simmer for an additional 30 minutes.
  7. In a small bowl, whisk together the all-purpose flour with a little bit of water until smooth. Slowly stir the flour mixture into the stew and let it simmer for a few more minutes, until the stew has thickened.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with chopped fresh parsley.
