Spinach and Feta Puff Pastry Cups Recipe

Ingredients:

  • 1 tablespoon vegetable oil
  • 1/3 cup finely chopped onion
  • Kosher salt, to taste
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 2 large eggs, divided
  • 1 (10-ounce) package frozen spinach, thawed and thoroughly squeezed dry
  • 3/4 cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped

  • 2 teaspoons lemon zest
  • Freshly ground black pepper, to taste
  • Cooking spray
  • All-purpose flour, for rolling puff pastry
  • 1 sheet from 1 (17.3-ounce) package puff pastry, thawed in the refrigerator

Directions:

  • Prepare Onion and Garlic: Heat the vegetable oil in a medium skillet over medium heat. Add the finely chopped onions, sprinkle with a pinch of kosher salt, and cook, stirring occasionally, until they become softened, which should take about 4 to 5 minutes. Add the minced garlic and continue to cook until fragrant, for about 30 seconds more. Remove the skillet from the heat.
  • Mix Filling: In a large bowl, combine the softened cream cheese and 1 of the eggs. Stir in the cooked garlic-onion mixture, thawed and drained spinach, crumbled feta cheese, chopped fresh dill, and lemon zest. Season the mixture with salt and freshly ground black pepper to your liking.
  • Prepare Muffin Tin and Puff Pastry: Grease 9 cups of a muffin tin using cooking spray. On a lightly floured surface, roll out the puff pastry sheet to form a 12-inch square. Cut the pastry into 9 smaller squares, each measuring about 4 inches wide. Gently place each puff pastry square into a greased muffin cup, allowing the corners to overhang the sides. Spoon approximately 2 1/2 tablespoons of the prepared filling into the center of each pastry square. Fold the pastry corners over the filling, meeting them in the center and pinching them together. Refrigerate for 30 minutes or freeze for 15 minutes to firm up.

  • Preheat Oven: While the pastry cups chill, adjust an oven rack to the center position and preheat the oven to 400°F (200°C).
  • Brush with Egg Wash: In a small bowl, beat the remaining egg with 1 teaspoon of water. Brush the egg wash on top of the chilled pastry cups.
  • Bake to Perfection: Place the muffin tin in the preheated oven and bake until the puff pastry is puffed and golden brown on the bottom, which should take approximately 25 minutes. Allow the pastry cups to cool slightly before carefully lifting them out of the muffin tin. These delicious Spinach and Feta Puff Pastry Cups can be served warm or at room temperature.
