Spaghetti Squash Primavera Recipe

Ingredients:

For Spaghetti Squash:

  • 1 medium spaghetti squash, halved, seeds removed
  • 1 tablespoon extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper

For Primavera Filling:

  • 1/2 small red onion, finely chopped
  • 1 orange bell pepper, finely chopped
  • 1 cup grape tomatoes, halved
  • 1 medium zucchini, cut into half-moons
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon Italian seasoning
  • 2 1/2 cups cooked shredded chicken
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • Freshly chopped parsley, for garnish

Directions:

  • Roast Spaghetti Squash: Preheat your oven to 400°F. Drizzle the cut sides of the spaghetti squash with extra-virgin olive oil and season them generously with kosher salt and freshly ground black pepper. Place the squash halves cut side down on a large, rimmed baking sheet. Roast them in the oven until they become tender, which should take approximately 30 to 35 minutes. Once done, let the squash cool slightly. Then, using a fork, gently scrape the flesh to create spaghetti-like strands. Keep the oven on for the next step.
  • Prepare Primavera Filling: While the spaghetti squash is roasting, prepare the primavera filling. In a large skillet over medium heat, heat the extra-virgin olive oil. Add the finely chopped red onion and orange bell pepper, and cook until they become slightly softened, about 3 to 4 minutes. Add the halved grape tomatoes, zucchini, minced garlic, and lemon zest to the skillet. Season the mixture with kosher salt, freshly ground black pepper, and Italian seasoning. Stir well and cook until the vegetables become soft, which should take approximately 3 to 4 more minutes. Then, stir in the shredded chicken, and remove the skillet from the heat.

  • Combine Filling with Squash: Divide the prepared primavera filling evenly between the roasted squash halves. Gently stir to combine the filling with the spaghetti squash strands.
  • Melt Mozzarella: Top each stuffed squash half with shredded mozzarella cheese. Return the squash halves to the oven for about 5 minutes, or until the mozzarella cheese is beautifully melted.
  • Garnish and Serve: Just before serving, garnish the stuffed spaghetti squash with freshly grated Parmesan cheese and a sprinkle of freshly chopped parsley. Your Spaghetti Squash Primavera is now ready to be enjoyed.
